National Zucchini Day, zucchini

Aug. 8 is going green! Not only is it National Dollar Day, but it is also National Zucchini Day. Not to be confused with National Zucchini Bread Day which is observed in April, this annual food holiday celebrates all things zucchini.

Zucchini, also referred to as summer squash, grows on vines and can be boiled, baked, grilled, fried or steamed. Zucchini not only tastes great, but is good for you, too! Low in calories and high in fiber, zucchini also contain Vitamin A and C, folate, manganese and potassium.

In honor of National Zucchini Day, why not try whip up one or two delish zucchini-inspired dishes?
